First Aid salad

 

There are some times that the day's schedule changes dramatically. You set a program but various factors don't let you follow it . And there where you think you have all the time needed ... da da .. its not enough ! You realize that the time flies and there is no time left to do your cooking.

I've been there, I believe the same might have happened to you too. And the question rises : What are we going to eat ? Of course a delicious salad with whatever we have on hand. Quickly and easily we can have a full meal. Open the fridge, grab your ingredients, add some more from the cupboard and you're ready. If you have a little more time try a Ceasar, if not, a salad with cherry tomatoes I think it would be nice as well with cheese ... or give a try to my today's proposal.

Adjust the ingredients of the recipe depending on your taste and what's in your kitchen.

Ingredients : 

 
  • 2 barley rusks (or barley rusks with oil or 1 cup croutons)
  • 2 eggs (hard boiled)
  • 1 can of tuna in water
  • 1 tomato medium size in cubes
  • 50 gr parmesan grated
  • salt black pepper
dressing
  • 2 tbsp ketsup
  • 2 tbsp mayonaise
  • 1/2 tsp olive oil
 

Preparation : 

 
  1. Lightly soak rusks under the tap water.
  2. Break them into small bite size pieces and put them in a bowl .
  3. Add the tomato, the eggs cut in slices, tuna drained and cut into small bites, parmesan, salt and pepper to taste.
  4. In another small bowl mix dressing ingredients.
  5. Pure dressing over the salad.
  6. Serve
